The entrance to the Horoyoi Jokagura is the 220-year-old Nishio Residence, which is adjacent to the main brewery, and welcomes visitors in the same atmosphere as the Edo period building. The tour facility is a renovated sake brewery that has been in operation since the Edo Period (1797), and displays old tools used in the actual sake brewing process and introduces the sake production process on panels. Old tools that were actually used for sake brewing are displayed and the production process of sake is introduced on panels.

Description

Houmei Sake Brewery Cauldron Room & Rice Washing Room

The Houmei Sake Brewery Cauldron Room and Rice Washing Room is a building constructed around 1830 for preparing the rice used for sake brewing. It is located to the south of Storehouse No. 2, on the east side of the site. It is a single-story “Dozo-zukuri” (a fireproof building made of wood and thickly coated with mud) with a “Kirizuma-zukuri” roof shape (a mountain shape resembling an open book laid pages-down) covered with wave-shaped tiles. The building has an area of 96 square meters. A small room with a slight overhang was built in the southwest corner and used as a material inspection room. The inside was used as a work space for brewing sake, with an earthen floor covered with straw instead of wooden flooring.
This room is where the initial stages of the brewing process take place, such as washing and steaming the rice that is the raw ingredient used in brewing sake. Carrying out these steps will lead to making delicious sake.

Houmei Sake Brewery Fermentation Room

The Houmei Sake Brewery Fermentation Room, built around 1830, is a large building where brewing and storage tanks are kept located to the south side of the Cauldron Room and Rice Washing Room. It is a two-story “Dozo-zukuri” (a fireproof building made of wood and thickly coated with mud) with a “Kirizuma-zukuri” roof shape (a mountain shape resembling an open book laid pages-down). The building has an area of 246 square meters, with plastered walls and vertical paneling on the lower portion. The interior is spacious with a ceiling spanning 20 meters in height to accommodate large barrels.
In the process of sake brewing, the step known as mashing involves adding koji and water to the steamed rice, which is the raw ingredient for sake in order to ferment it. The process is divided into three steps, and the steps of saccharification and fermentation occur simultaneously. This technique is known as multiple parallel fermentation and is one of the most advanced brewing methods in the world, which results in a brew with higher alcohol content.
The fermentation room is an essential facility for Houmei and is a major element of the brewery's landscape.

Houmei Sake Brewery Office No. 1

Houmei Sake Brewery Office No. 1 stands on the north side of the site, to the west of the main building, which is the brewery’s central building. It is a small one-story wooden building with an area of 6.3 square meters with only one room, and a roof that is highest on the street (north) side that slopes downward to the south. The upper portion of the wall on the street side is covered with fire-resistant plaster made from limestone, while its vertical lattice design adds a window-like accent. At the time of its construction, the building consisted of only this wall and the roof.
Today it is used as an office for the store, with a room added under the roof.
Office No. 1 faces to the north, and serves as a part of the scenery of the northern side of the brewery today.

Houmei Sake Brewery Office No. 2

Houmei Sake Brewery Office No. 2 is a rectangular, one-story wooden structure located to the southwest of the fermentation room, with the peak of the roof extending from north to south. The building has an area of 43 square meters, with a single room on the inside, and a roof that slopes in two directions at the top and four directions at the bottom. This design is known as an "Irimoya-zukuri" (gabled, hipped roof), and is one of the traditional roof styles used in East Asia.
Office No. 2 is located on the south side of the site near the entrance from the road, and it plays an important role as the office of the brewery's headquarters.

Houmei Sake Brewery Main Building

The Houmei Sake Brewery main building was built in 1797 in Gofukumachi, an area to the northeast of Sasayama Castle. It is a two-story wooden structure. The building has an area of 210 square meters, and is designed with a corridor running from the entrance to the rear building, and a raised floor on the east side. The main building also doubles as the store and the residence of the owners, the Nishio family, who still serve as the chief representatives of Houmei Sake Brewery.
Its gently curved tile roof that faces the street is a characteristic feature of the building, and conveys in the present day the bygone scenery of the castle town of Sasayama.

Houmei Sake Brewery Storehouse No. 1

Houmei Sake Brewery Storehouse No. 1 is located in the northwest corner of the site and was built adjacent to the main building and Office No. 1. The building is a single-story “Dozo-zukuri” (a fireproof building made of wood and thickly coated with mud) with a “Kirizuma-zukuri” roof shape (a mountain shape resembling an open book laid pages-down) that uses wave-shaped tiles. The building has an area of 20 square meters. The upper portion of the wall on the street side is covered with fire-resistant plaster made from limestone, while its vertical lattice design adds window-like accents.
The only openings in the building are a doorway located on the east side of the building and a window on the south side. This building has remained to this day as one of the architectural elements that make up the townscape.
Houmei Sake Brewery Storehouse No. 1 is intended for personal use and thus entry is not allowed.

Houmei Sake Brewery Storehouse No. 2

Houmei Sake Brewery Storehouse No. 2 is located to the southeast of the main building, on the east side of the site. The roof of the building has a “Kirizuma-zukuri” shape (a mountain shape resembling an open book laid pages-down) that uses wave-shaped tiles, and it is also well ventilated. The building is a two-story “Dozo-zukuri” (a fireproof building made of wood and thickly coated with mud). The lower portion of the wall features a "Namako" (white lattice on a black base) design with a striking connected appearance, and there is a double-opening door on the north side a bit to the west, as well as a small window on the top. The area of the building is 23 square meters. Its construction perfectly conveys the characteristics of the Japanese Dozo-zukuri building style.
Houmei Sake Brewery Storehouse No. 2 is private, thus public entry is not allowed.

Houmei Sake Brewery Annex

The Houmei Sake Brewery Annex is located on the west side of the site and is connected to the main building on its east side.
The annex was built late, comparatively speaking, in 1868. It is a single-story wooden structure with an area of 86 square meters. The interior has three Japanese-style rooms and one Western-style room, with the entrance on the north side of the building toward the east. There is a corridor (“En” in Japanese) on the south side, with a toilet located in an extension at the end of the corridor.
The Japanese-style rooms, which are about 16.2 square meters in size, have been raised a step to provide a place to display paintings and decorative items. This building provides one of the most valuable representations of Japanese architectural style in the present day.
The Houmei Sake Brewery Annex is private thus entry is not allowed.

Houmei Sake Brewery Tank Room and Koji Room

Houmei Sake Brewery’s tank room and koji room are a single-story “Dozo-zukuri” (a fireproof building made of wood and thickly coated with mud) connected to the south side of the brewery’s fermentation room. The area of the building is 127 square meters.
A koji room with double-layered walls is located on the south side. The koji room is where koji, a type of mold that plays an important role in making sake, is made. The koji saccharifies the raw ingredient, rice, enabling alcoholic fermentation. Koji is a living thing, and thus it is necessary to control the temperature and humidity.
The tank room, a large room with an earthen floor and no pillars inside, is where the sake is pressed. This large-scale building is indispensable to the sake brewing industry, and it preserves the history of Tamba-Sasayama to this day.
